Laura, this was a fun article. I would've missed it if you hadn't linked it. What a unique challenge these chefs more than meet. Mastering the entire balancing act is amazing in itself. That they actually produce such delightful meals, is an entirely different mastery! Impressive.
I'm glad you enjoyed it, Dana! I thought it was fascinating that some chefs have so memorized their routes that they know which parts of the track are smoothest (or not!) and most conducive to preparing certain types of foods.
